- Purple Sweet Potato300 g
- Wheat Flour100 g
- Salt and black pepper to taste
- Tomato Passata1 cup
- Basil1 tablespoon
- Olive oil1 tablespoon
- Butter1 tablespoon
- Cook the potatoes and when they are soft, remove the peel and mash
- Pass the mashed potato through a sieve and then add the flour, salt and black pepper.
- Mix the dough well on a countertop, make rolls and cut in the desired oven.
- Take it to cook in boiling salted water and when it floats it is ready to remove
- Sauté the gnocchi in butter with finely chopped basil and serve with tomato sauce made with passata
