Pumpkin Tortelline in Basil Butter

Comecamos com o purê de abóbora, coloque a abóbora picada numa panela, com sal e regue com azeite. Tampe a panela e deixe cozinhar por 10 min. Quando estiver macia, bata com um mixer e reserve até esfriar.

We start with the pumpkin puree, place the chopped pumpkin in a pan, with salt and drizzle with olive oil. Cover the pan and let it cook for 10 min. When soft, beat with a mixer and set aside until cool.

Num bowl adicione a farinha os ovos, sal quanto baste é um fio de azeite, misture até obter uma massa homogênea, leve para a geladeira por pelo menos 20 min.

In a bowl add the flour, eggs, salt as much as a drizzle of olive oil, mix until you get a homogeneous mass, take it to the fridge for at least 20 min.

Abra a massa e feche-a com o pure, molde os tortellines como no vídeo. Cozinhe-os numa panela abundante em água.

Open the dough and close it with the puree, mold the tortellines as in the video. Cook them in a large pot of water.

Numa frigideira adicione a manteiga, o manjericão e em seguida os tortellines cozidos, adicione o vinho branco, a pimenta do reino finalize com parmesão ralado e sirva.

In a frying pan, add the butter, the basil and then the cooked tortellines, add the white wine, the black pepper, finish with grated parmesan and serve.
