- Cooked pasta (penne or your choice)500 g
- Pasta cooking water1/2 cup
- Spinach2 cup
- Cherry tomatoes cut in half12 unit(s)
- Goat cheese (optional and can be replaced with gorgonzola)150 g
- Pepper Mix0 to taste
- Salt0 to taste
- Olive oil2 tablespoon
- Minced garlic cloves4 unit(s)
- In a pan over low heat, sauté the garlic in the oil for 2 to 3 minutes, without burning.
- Add the tomatoes and sauté until they release liquid.
- Add the pasta cooking water and the leafless spinach, sauté until wilted
- Put the macaroni and cheese cut into cubes, mix until melted and the sauce thickens
