Penne with flambé sausage ragu (ready in 15 min!)

● Aqueça uma frigideira e coloque uma colher de sopa de azeite. Junte a linguiça e deixe dourar.


● Heat a frying pan and add a tablespoon of oil. Add the sausage and let it brown.


● Acrescente primeiro a cebola picada em cubinhos e, em seguida, a pimenta dedo de moça e o alho picados, junto com a erva doce, e a noz moscada. Refogue por 2 minutos.


● First add the diced onion and then the finely chopped chili pepper and garlic, along with the fennel and nutmeg. Saute for 2 minutes.


● Coloque a cachaça e tombe levemente a frigideira em direção à chama do fogo. Nesse momento a cachaça vai entrar em combustão para flambar a linguiça, mas não se assuste. Deixe o chama da frigideira se apagar e junte o tomate pelado e o extrato de tomate.


● Add the cachaça and tilt the skillet slightly towards the flame of the fire. At that moment the cachaça will ignite to flambé the sausage, but don't be scared. Let the flame of the skillet go out and add the peeled tomato and tomato paste.


● Ajuste o sal. A sugestão é para 1 colher de chá de sal. Mas tempere à gosto.


● Adjust the salt. The suggestion is for 1 teaspoon of salt. But season to taste.


● Cozinhe o macarrão em 5 litros de água fervendo pelo tempo indicado na embalagem. Retire e misture ao molho finalizando com as folhas de manjericão e queijo ralado.


● Cook the pasta in 5 liters of boiling water for the time indicated on the package. Remove and mix with the sauce, finishing with the basil leaves and grated cheese.
