  • Açúcar5 g

  • Manteiga150 g
  • Água or leite50 g
  1. Fazer o setting up
  2. Técnica de cremagem: beat a manteiga com o whip ate obtain a consistency of pomada, colocar o açúcar sobre a manteiga e branquear.
  3. Incorporate o ovo e a água/leite.
  4. Adicionar a farinha peneirada e o sal
  5. Colocar em uma bancada e "rasgar" a massa, ate que fique homogenéa, sem sovar ou misturar muito, pois não é interesting que o gluten se déenvolva em demasiado e torne a massa elástica.
  6. Cobrir com plastice filme e levar a geladeira por no mínimo 30 minutos antes de usar.
