- Initially put the water to boil to cook the pappardelle.
- In a large pan, sauté the onion and garlic cloves in a tablespoon of olive oil. Then add the guanciale and let it cook until the fat dissolves. Done that, put the peeled tomatoes, hit salt and pepper and let it reduce.
