Oatmeal Cake with Oatmeal

  • Eggs3 unit(s)
  • Sugar or culinary sweetener1 cup
  • Coconut oil3 tablespoon
  • Cornmeal2 cup
  • Flaked oats (¤)4 tablespoon
  • Baking powder1 tablespoon
  • Coconut milk200 ml
  • Guava in pieces1 cup
  • Shredded semi-cured cheese1 cup
  1. In a bowl, beat the eggs and sugar until you get a creamy mixture.
  2. Add the coconut oil, coconut milk, cornmeal and oatmeal and stir well.
  3. Finally, add the yeast and mix just to incorporate.
  4. Pour the dough into a buttered and cornmeal-greased baking dish.
  5. Distribute the pieces of guava paste over the dough and, on top, place the grated cheese (*)
  6. Bake in a preheated oven at 180°C for about 40 minutes or until completely cooked.
  7. (*) Step 5 is optional if you can't eat too sweet cake
  8. (¤) you can replace the rolled oats with 2 tablespoons of oat bran or oat flour
