  • Chopped cherry tomatoes or chopped common tomatoes1 cup
  • Shredded Mozzarella Cheese200 g
  • Salt to taste
  • Ground black pepper to taste
  • Grated Parmesan Cheese5 tablespoon
  • Oregano to taste
  • Wheat Flour1 cup
  • Baking Powder1 teaspoon
  1. Place the eggs in a bowl and beat well until frothy with a fork or fouet.
  2. Sift the flour little by little on top of the beaten eggs and keep stirring constantly to avoid lumps.
  3. Season with salt, ground black pepper and oregano to taste
  4. Add chopped tomatoes and grated mozzarella cheese and mix well.
  5. Lastly add the baking powder and mix well.
  6. Grease a rectangular shape with butter and place the omelet dough, add the grated parmesan on top to finish
  7. Bake in a preheated oven at 180 degrees for about 30 minutes or until golden on the outside and very soft on the inside 😉 serve next 😋
