- Levain180 g
- Sugar50 g
- Condensed milk395 g
- Salt4 g
- Eggs3 unit(s)
- Butter120 g
- Milk300 ml
- grated coconut150 g
- Vanilla essence1 tablespoon
- Organic Dry Yeast3 g
- Cinnamon powder to taste
- Feed the biological yeast with 2 tablespoons (soup) water and 1 tablespoon (coffee) sugar. Let it rest to grow
- Beat in the blender: eggs, 180 g of condensed milk, vanilla essence, 50 g of butter, salt and sugar.
- Add flour in a bowl, add the blender mixture, the levain and the already grown yeast.
- Knead very well, for about 15 minutes, until the dough does not stick to the hands.
- Let it rest for about 1 hour. In winter I put it inside the oven slightly heated, about 20 to 28°. I also put a mold with hot water to keep the humidity and temperature. If it's hot, I don't heat the oven or add hot water. Only room tempered or lukewarm water.
- Knead again for another 15 to 20 minutes. Let it rest again for another 3 hours.
- Roll out the dough with a rolling pin, on a floured bench, with a thickness of half a centimeter. Pass the rest of the butter, more or less 50g of condensed milk, 100g of grated coconut, cinnamon powder. Roll up and cut slices at the length of about 2 fingers.
- Place the slices in a greased pan (25cm wide x 35cm long x 5.5cm high) and take to rise, in the same scheme as in the previous rest periods. It takes up to 7 to 9 hours to grow.
- Mix the remaining condensed milk and milk. Wet the dough lightly. Not the whole mix. Bake in oven at 180° until golden on top.
- Warm the mixture of milk and condensed milk. Take the slices out of the oven and pour the mixture on top. Sprinkle the rest of the grated coconut and cinnamon.
- Wait for it to cool and the milk to be absorbed.
