  • Eggs2 unit(s)
  • Olive oil1 tablespoon
  • Spinach3 cup
  • Salt to taste
  • Cornmeal for Sprinkling to taste
  1. Put the spinach in a plastic bag, tie the bag and make a hole in one end. Microwave for 1 minute, until spinach is wilted. Blend the spinach, eggs and oil until it becomes a cream with no lumps. Then mix this cream with the flour. Knead with your hands until the dough is smooth and does not stick to your hands (you may need to add more flour to reach this point) Roll out half of the dough with the help of a rolling pin until it is very thin. Roll the dough into a roll and cut to the desired thickness. Do the same with the other half. Cook in boiling salted water until "al dente".
