- Dough: Wheat Flour11/2 cup
- Milk1 cup
- Large Eggs2 unit(s)
- Chopped Spinach Leaves11/2 cup
- Salt1 coffee spoon
- Stuffing and Sauce: Braised Ground Beef1/2 kg
- Sour cream1/2 cup
- Tomato Sauce1 cup
- Grated Parmesan Cheese0 to taste
- Dough: Blend all the dough ingredients in a blender. Heat a small skillet with butter and pour in about 2/3 cup (coffee) of batter. Rotate the skillet quickly to form thin pancakes. Turn the dough disc over and let it brown on the other side. Transfer to a platter. Repeat the process with the remaining dough.
- Assembly: Place a strip of ground beef in the middle of the pancake and fold both sides in half. Arrange it in a refractory form, with the fold down, keeping it warm until you fill the remaining pancakes. Mix the cream with the tomato sauce and pour over the pancakes. Sprinkle with grated cheese and bake in a moderate oven (180°C), preheated, for 10 min. Serve immediately.
- Tip: Always let the pancake batter rest for about 1 hour before using it.
