- Peel, cut into large pieces and cook the potatoes until soft. Drain the water and mash the potatoes well.
- Wait for it to cool a little, season with salt and add some of the flour, the yolks and mix well with your hands.
- Add the rest of the flour little by little. The amount of flour can vary, the point is a soft dough that you can roll without sticking to your hands.
- Dust a worktop with flour and roll the dough into rolls. Cut these rolls into several 2cm pieces and place in a greased shape so they don't stick.
- Cook the gnocchi in boiling water with a little salt. Don't cook several at the same time so they don't stick together. When the gnocchi rise to the surface of the water, take it out!
- Serve with a sauce of your choice or just tossed in herbed butter!
