  1. Sauce Saute the meat as usual with the vinegar, once the liquid has dried, add the tomatoes, tomato sauce and water, seasonings and let it boil until the sauce thickens and set aside.
  2. Gnocchi Peel the potatoes and cut into four parts and cook until al dente, that is, when you stick a fork and see that it is soft without falling apart, discard the water and mash the potatoes with a fork or ricer. Transfer the potatoes to a bowl and add the egg, margarine, season with a little salt and black pepper and add a small amount of wheat flour, and mix little by little, mix the dough with your hands and add wheat to it. start to unglue from your hands, but don't let the dough get too dry and heavy, transfer the dough to a floured bench and take a small portion and make a roll and with the help of a knife, cut into cubes and reserve them on a floured platter not to stick. In a pan with boiling water, always on fire, place portions of the gnocchi to cook, as soon as you put it, wait for the gnocchi to rise to the surface, and after checking that they all have risen, remove and place directly in a refractory with a little sauce, add another portion, and repeat the process until all the gnocchi are cooked, alternating a layer of gnocchi with sauce until you finish with the rest of the sauce. Serve immediately.
