  1. Cook the potatoes in water until they are soft. Peel them and pass through the juicer while still hot. Gradually add the flour and salt, knead well. Place the dough on a floured table and roll. Cut each roll into pieces of about 2 cm. Bring to a boil, in a pan with plenty of water seasoned with salt. When the water comes to a boil, add the gnocchi until they start to rise. Put cold water in a bowl with a colander inside, remove the already cooked gnocchi and place them in the colander to provide thermal shock. Repeat the process until all the pasta is cooked. Drain well and place the gnocchi in a refractory, set aside. SAUCE: Chop the onion, very fine and, in a pan, fry it with oil. Add the sausage and brown. Add the tomato sauce, cilantro and oregano and let it cook. Pour it over the gnocchi, sprinkle cheese on top and bake in the oven to brown, serve hot and enjoy!
