Fried ball of cod

Retire a pele do bacalhau e deixe dessalgar por 48 horas. Depois, em uma panela, coloque água e leve o bacalhau para cozinhar. Escorra e reserve o caldo. Descasque as batatas e leve-as para cozinhar no caldo do bacalhau. Enquanto cozinha as batatas, coloque o bacalhau em uma bacia, retire o restante da pele e as espinhas e bata bem, com um soquete, para deixá-lo desfiado. Quando as batatas estiverem cozidas, passe pelo espremedor de batatas e reserve. Em uma frigideira, coloque azeite e alho e de deixe dourar. Junte as batatas ao bacalhau batido e, feito isso, deposite o refogado de azeite e alho a essa mistura. Amasse bem, junte os ovos, a salsa batida e, novamente, amasse bastante. Se necessário, ajuste o sal. Modele as bolinhas e, se quiser, esta é a hora para congelar. Se for fazer na hora, frite em óleo bem quente e sirva quando estiverem dourados.

Remove the skin from the cod and let it desalt for 48 hours. Then, in a pan, put water and take the cod to cook. Drain and reserve the broth. Peel the potatoes and cook them in the cod broth. While the potatoes are cooking, place the cod in a bowl, remove the rest of the skin and bones and beat well, with a socket, to leave it shredded. When the potatoes are cooked, pass through the potato masher and set aside. In a skillet, add oil and garlic and let it brown. Add the potatoes to the beaten cod and, after that, add the oil and garlic sauté to this mixture. Knead well, add the eggs, the beaten parsley and, again, knead well. If necessary, adjust the salt. Shape the balls and, if you want, this is the time to freeze them. If you are going to make it right away, fry in very hot oil and serve when they are golden.
