  • mashed potato (1 large potato)200 g
  • fresh yeast or 1 packet of 10g dry yeast20 g
  • sugar (1 teaspoon)5 g
  • salt (1 teaspoon)5 g
  • milk200 ml
  • all-purpose flour (4 cups)600 g
  • butter or margarine (3 level tablespoons)60 g
  • egg2 unit(s)
  • oil (1/4 cup)40 g
  • yolk for brushing. to taste
  1. In a large bowl or bowl, combine the sugar with the yeast and mix well.
  2. Then add the eggs and mix.
  3. Add the butter, oil, salt, mashed potato and mix again.
  4. Add the wheat flour, mix everything and add the milk gradually while kneading the dough with your hands.
  5. Knead the dough well for about 10 minutes or until it is very smooth and homogeneous.
  6. TIP: If necessary, add a little more wheat flour.
  7. Potato-based dough tends to be stickier, so be careful not to add too much flour.
  8. Then cover the dough and let it rest for 10 minutes.
  9. After this time, divide the dough into balls in the desired size.
  10. Then accommodate in a shape and cover with a cloth.
  11. Let them rest for 40 minutes.
  12. After this time, brush the buns with yolk.
  13. Bake in a preheated oven at 180°C for about 35 minutes or until golden.
  14. Makes about 22 potato buns.
