- Fresh Fettuccine500 g
- Bacon150 g
- Eggs5 unit(s)
- Grated Parmesan or Pecorino100 g
- Salt to taste
- Black Pepper to taste
- Cut the bacon into cubes and fry very slowly in a non-stick skillet, starting with it cold. Reserve
- In a bowl, beat the eggs with the grated Parmesan or pecorino and the black pepper.
- Cook the fettuccine in salted water according to the package instructions, removing 1 minute before the indicated time. Reserve 1 cup of cooking water
- In the bacon frying pan, add the fettuccine, the egg cream with cheese and the cooking water. Shake well. The heat of the pasta and water cooks the eggs.
- Season with salt and serve
