  • Eggplant flour6 tablespoon
  • Olive oil2 tablespoon
  • Water100 ml
  • Mozzarella cheese to taste
  • Oregano to taste
  • Homemade tomato sauce to taste
  1. In a bowl, mix the eggplant flour, olive oil and water until you get a mousse-like texture.
  2. Arrange the dough and spread it out on a baking sheet lined with parchment paper until it forms a circle.
  3. Bake at 200°C for about 20 minutes.
  4. Remove the dough from the oven and spread the tomato sauce on top.
  5. Arrange the slices of mozzarella and finish with a little oregano.
  6. Return to the oven until the cheese melts.
