Creamy baked rice with leftover tenderloin

  • Cooked parboiled rice4 cup
  • Diced tenderloin1 cup
  • Cottage cheese150 g
  • grated carrot3/4 cup
  • Chopped Onion1/3 cup
  • Butter1 tablespoon
  • Chopped green onion1/2 cup
  • Mozzarella cheese or grated parmesan1/2 cup
  • Tomato sauce2 cup
  1. In a pan heat the butter and brown the onion.
  2. Add the tenderloin and sauté for about 5 minutes.
  3. Add the carrot, tomato sauce and cottage cheese and mix.
  4. Cook for 3 minutes and add the rice. Mix well and turn off the heat.
  5. Add the onion and mix. Transfer the rice to a platter and sprinkle the cheese on top.
  6. Bake in a preheated oven at 220ÂșC for about 15 minutes or until the cheese is melted.
