- Gluten-free spaghetti to taste
- Chopped Bacon1/2 cup
- Gems4 unit(s)
- Olive oil2 tablespoon
- Parmesan or pecorino cheese1 cup
- Black pepper to taste
- Salt to taste
- Macaroni Cooking Water1/4 cup
- Heat a pan for the pasta with plenty of salt.
- Meanwhile, in a large skillet, heat the oil and sauté the bacon until it starts to brown.
- With the water boiling, put the pasta to cook.
- Reserve the pan with the bacon off, as it should be hot, but not overcooked.
- Grate the cheese and separate the yolk from the white. Mixing both.
- With the pasta on point, turn on the skillet and drain the pasta, separating some of the cooking water.
- Place the pasta in the pan with the bacon, then add the egg yolks with grated cheese and the cooking water, mixing everything well and quickly.
- The cheese will melt and the yolk will emulsify with the movement and the hot water, cooking and forming a cream.
- Turn off the heat and add the pepper. Serve immediately.
