- Cassava500 g
- Wheat flour100 g
- Fresh cream300 ml
- Parmesan cheese100 g
- Brie Cheese200 g
- Sliced Almonds to taste
- Salt and Black Pepper to taste
- White wine70 ml
- Cook the maniocs with their skins until very soft, pass through a fine sieve and add the wheat flour and season with salt, black pepper and nutmeg to taste. If necessary, add more flour. Model the gnoccis in the desired shape
- In a pan take the fresh cream and half of the cheeses to melt with 1/2 cup of white wine and reduce to the desired point.
- Cook the gnocci in plenty of water and place in a deep dish, place the cheese sauce and sprinkle the rest of the cheese (roughly cut the brie to show it in the presentation) and brown until golden, finish with slivered almonds and beet sprouts.
