  • Black Peppercorns1 tablespoon
  • Parmesan cheese or pecorino or grana padano250 g
  • Spaghetti or Linguine320 g
  1. In a large pot put a good amount of water to boil, to cook the pasta, approximately 5L of water. Put half a spoonful of salt.
  2. While the water boils, place the peppercorns on a board or in a pestle and mash the grains roughly. If you don't have a pestle, it can be on a board and pressed with a knife, or with a pan, the important thing is that the grains are crushed.
  3. Grate the cheese.
  4. After the water boils, add the pasta. Let cook for approximately 9 minutes.
  5. While the pasta is cooking, add the peppercorns to a pan and heat to release the aromas.
  6. Add about 3 ladles of the cooking water to this pan along with the peppers. Stir for approximately 2 minutes.
  7. Activate the cheese you grated, and stir until you form a cream, very creamy. Turn off the fire.
  8. When the pasta is almost ready, taste it. Mix well so that the pasta incorporates the sauce.
  9. Remove the pasta and assemble the dish as desired and serve immediately. Grate some more cheese on top and grind some more pepper. Serve! It's really good and easy to make. 🤤😉
