natural yogurt

coconut oil

agave

zest of 1 lemon

coconut sugar

white spelled flour

yeast

fresh or frozen blueberries

Blueberry and Spelled Muffins



Untar uma forma de muffins ou colocar forminhas de papel dentro da forma de muffins.
Pré-aquecer o forno a 180ºC.

Numa taça colocar os ovos, iogurte, óleo derretido, agave e raspa de limão. bater muito bem com a batedeira.

Noutra taça colocar o açúcar de coco, a farinha e o fermento e envolver bem com a colher de pau.
Adicionar os líquidos aos sólidos e mexer até ficar homogéneo, sem bater muito a massa.

Por fim juntar os mirtilos e envolver na massa.
Com uma colher, colocar a massa nas forminhas, até 3/4 de capacidade e levar ao forno a 180ºC, até cozer e dourar (teste do palito).

Grease a muffin tin or place paper liners inside the muffin tin.
Preheat the oven to 180ºC.

In a bowl place the eggs, yogurt, melted oil, agave and lemon zest. beat very well with the mixer.

In another bowl, place the coconut sugar, flour and yeast and mix well with a wooden spoon.
Add the liquids to the solids and stir until smooth, without over-beating the dough.

Finally, add the blueberries and fold into the dough.
With a spoon, put the dough in the molds, until 3/4 capacity and take it to the oven at 180ºC, until cooked and golden (toothpick test).
