Zucchini Involtini with goat cheese, tomato and pesto

  • Medium zucchinis2 unit(s)
  • Boursin Goat Cheese150 g
  • Can of Peeled Tomatoes1 unit(s)
  • Basil to taste
  • Basil Pesto for garnish to taste
  • Finely grated Parmesan50 g
  1. Thinly slice the zucchinis with a mandoline. Grill each slice until slightly browned. Reserve.
  2. Season the boirsin cheese with salt and pepper and mix.
  3. Place the contents of the can of peeled tomatoes in a bowl, mash the tomatoes with your hands to dissolve them. Mix with the basil and season with salt and pepper.
  4. Place a tablespoon of boursin on the end of the zucchini slice and roll it up. Arrange three rolls on each plate and put a little tomato sauce on top of the rolls. Garnish the dish with the pesto. Sprinkle with Parmesan and place in the oven to brown.
