- Brown rice1 cup
- Chicken cuts (I used thigh and drumstick)1/2 kg
- Chopped pepperoni1/2 unit(s)
- Red and yellow peppers, lemon to taste
- Chopped Onion and Garlic to taste
- Chopped green smell to taste
- Black pepper, paprika to taste
- Carrots, potatoes, chayote chopped to taste
- Salt and oil to taste
- Hot water750 ml
- Season the chicken with lemon, salt, black pepper and the ingredients you want. Let the seasoning settle well (I left it about 30 minutes before starting the preparation)
- Fry the chicken in the oil. Reserve in a separate container.
- In the same pan where you browned the chicken, give the pepperoni a quick brown. Add the reserved chicken, onion, garlic, peppers, paprika. saute
- Add the chopped vegetables. Mix well.
- Add the rice. Mix and add enough hot water to cover everything. The water should be at least two fingers above the mixture. Add salt to taste. Put on medium heat.
- Finish with the green smell and, if desired, a drizzle of olive oil.
