- Sliced Eggplant1 unit(s)
- Sliced Tomatoes1 unit(s)
- Olive oil to taste
- Salt to taste
- Chimichurri to taste
- Buffalo mozzarella100 g
- Basil leaves to taste
- Wash well and cut the eggplant and tomato into slices.
- Quickly grill the eggplant slices with just olive oil and salt.
- Assemble on a plate placing 1 eggplant slice, 1 tomato slice and a piece of cheese. Interleave in that order.
- Season with salt and chimichurri. Drizzle with olive oil and sprinkle with basil leaves.
- It looks amazing!
