- eggplant1 unit(s)
- carrot2 unit(s)
- zucchini1 unit(s)
- red pepper1/2 unit(s)
- yellow pepper1/2 unit(s)
- green pepper1/2 unit(s)
- onion1 unit(s)
- garlic4 unit(s)
- olive oil3 tablespoon
- salt to taste
- Coconut soy sauce150 ml
- - Chop the onion and garlic in the processor together;
- Cut all the vegetables into small cubes;
- Add the oil in a large pan and when it heats up a little add the garlic and onion and sauté for a few minutes;
- Add the carrot and season with 1/4 tsp of salt and 1 tsp of soy sauce, sauté over medium heat and cover the pan for a few minutes (approximately 10 min). Carrots should go first because they are the toughest of vegetables and the one that takes the longest to soften;
- When the carrot is cooked, add the peppers and season again with 1/4 tsp of salt and 3 tsp of soy sauce. Saute and cover the pan for a few minutes (approx. 6 min);
- Then add the eggplant and season with 1 tsp of salt and 3 tsp of soy sauce, sauté and cover for a few more minutes (approximately 8 min);
- Finally, add the zucchini, season with 3 c/s of soy sauce, sauté, cover for just 2 minutes and turn off the heat. And it's done!
