Egg white1 unit(s)
Hydrated tapioca gum1 tablespoon
100% cocoa powder1 tablespoon
Vanilla essence (optional)1 coffee spoon
Sweetener to taste
Strawberry5 unit(s)
Whey or powdered milk20 g

In a bowl, combine the egg, white, tapioca starch, cocoa, sweetener and vanilla essence.
With the help of a fork or fouet, mix well until a very homogeneous mass. Reserve.
Chop the strawberries. Reserve.
Mix the whey or powdered milk with a little water until it has a creamy consistency. Add the water little by little so you don't miss the point. Reserve.
Heat a non-stick skillet greased with a little butter or coconut oil, and spread the dough so that it is very uniform, filling the entire bottom of the skillet.
When the dough comes off the bottom of the skillet, flip it over.
Spread the strawberries on half of the dough and pour the whey cream on top. Fold the other half of the dough over the filling.
Sprinkle whey or powdered milk and decorate with strawberries. Enjoy!😋
