- Tomato pelati1 can(s)
- Free-range eggs3 unit(s)
- Cumin1 pint
- Black pepper1 pint
- Smoked paprika1 pint
- Olive oil15 ml
- Salt1 pint

- Finely chop the garlic and onion
- Choose a good skillet with high edges or pan
- Sauté the garlic and onion well in the oil, add the bay leaf and dry seasonings.
- Pour the can of peeled tomatoes and with the help of a spoon break the whole tomatoes
- Let it cook on low heat, when it boils, taste the seasonings and correct the salt and remove the bay leaf.
- Break the three eggs in a separate container to avoid the risk of one being spoiled and losing the recipe!
- Leave the pan on the minimum heat, add the eggs, season on top, cover with the lid for 1 minute and turn off.
- The eggs will have a soft yolk and a dense tomato.
- Serve with whatever you prefer, natural fermentation bread, some chips or even pure, the recipe is super complete
- You can also finish with cilantro, parsley or chives if you like, it's delicious!
