  • Olive oil2 tablespoon
  • Shredded Chicken120 g
  • Mozzarella cheese2 unit(s)
  1. Choose two plump eggplants. Cut them in half, make diagonal cuts in their brains forming diamonds in the design and bake at 200°C for 40 min. The brain needs to be very soft
  2. Once cooked, remove the core with a spoon.
  3. Prepare the shredded chicken to taste, and mix with the eggplants.
  4. Stuff the eggplants with this mixture.
  5. Add half a slice of mozzarella cheese to each band of the eggplant.
  6. Bake in the oven until the cheese melts.
