  • Pupunha heart of palm500 g
  • Leek50 g
  • Yam200 g
  • Olive oil1 tablespoon
  • Sea salt to taste
  • Black pepper to taste
  • Water300 ml
  1. Saute the leek in olive oil until wilted. Add the diced peach palm and sauté for a few more minutes. Add the yam cut into cubes, add the water and cook until soft.
  2. Transfer to a blender and blend well. Add more water if necessary.
  3. Return the cream to the pan, let it boil to reduce and add seasonings to taste. I used 1 tbsp of salt and black pepper.
  4. Serve with herbs to taste, a drizzle of olive oil, sesame seeds and sliced almonds.
