  • Cooked Quinoa3 cup
  • Cabotia squash5 cup
  • Chopped Onion2 cup
  • Minced garlic2 tablespoon
  • Olive oil, salt and pepper to taste
  • Mint1 cup
  • Lemon juice1/2 cup
  1. 1. Saute the onion and garlic in olive oil, add the pumpkin, salt and set aside.
  2. Blend the mint leaves with the lemon in a blender and set aside.
  3. In a bowl, combine the cooked quinoa, sauteed pumpkin, mint and lemon. Put it in a shape and take it to bake in medium oven for approximately 30 minutes.
