  • Eggplant1 unit(s)
  • Cottage cheese200 g
  • Egg1 unit(s)
  • Cherry Tomato10 unit(s)
  • Grated Parmesan4 tablespoon
  • Chives to taste
  • Olive oil to taste
  • Salt and Black Pepper to taste
  1. Cut the eggplant lengthways and soak in salted water for 30 minutes.
  2. Beat an egg and mix with the cottage cheese, and season with salt and chives.
  3. Remove the eggplant from the water and make transverse cuts in each slice.
  4. Place the eggplant slices in a refractory brushed with oil, season with salt, black pepper and more oil. Place in the oven for 30 minutes.
  5. Remove the eggplant from the oven, and cover with the cottage mixture. Place the cherry tomatoes cut in half. Finally, sprinkle with Parmesan.
  6. Bake in the oven for another 30 minutes and then serve.
