- Creamy Coconut Milk200 ml
- Xylitol1/2 cup
- Sugar1 tablespoon
- For syrup: If you wish, you can skip this step, but xylitol does not caramelize. Put the sugar in the pudding mold and heat until caramelized, then add 2 tablespoons of water and stir until the sugar melts.
- Pudding: Beat the eggs, coconut milk and xylitol in a blender. Pour in the pudding mold, cover with aluminum foil and take it to a bain-marie in the oven at 200°C for 40 min.
- Creamy Coconut Milk: Blend 1 fresh grated coconut with 1 l of warm water in a blender. Then pass through a sieve. Add 1/2 teaspoon of xanthan gum and mix well.
