- - 160 grams of pure cocoa (if you do not have pure cocoa, substitute 160 g of unsweetened chocolate)135 g

- Coconut oil4 dessert spoon
- Vanilla1/3 coffee spoon
- Erythritol (can be substituted for xylitol, coconut sugar or any other sweetener of your choice in the proper proportions)9 tablespoon
- In a bain-marie, melt the chocolate and coconut oil.
- When melted, mix well until smooth.
- Separately, mix the yolks with the erythritol and vanilla.
- Add the yolk mixture to the cocoa mixture and stir until smooth. Then put it in the fridge to cool.
- Whip the egg whites. The more consistent the better.
- Remove the cocoa mass from the fridge and, little by little, add the egg whites to the cocoa in the container that will be used (remember that you should always add the whites to the cocoa, not the other way around). Use a wooden spoon to mix the whites with the cocoa and remember to stir very slowly and gently.
- Place in the fridge without covering. Can serve after 3 hours.
