- Sour cream200 g

- Xylitol100 g
- Fleur de sel to taste
- In a bowl, melt the chocolate and cream together, then add the yolks and set aside.
- In the mixer or in a very dry bowl, add the whites and beat them until they reach medium peaks, then gradually add the xylitol and continue beating until you get a shiny and shimmering meringue.
- In three parts add the meringue to the chocolate ganache so that it does not lose the inclusion of air. Place in the fridge for 4 hours before serving. Finish with fleur de sel.
