  • Buffalo ricotta or tofu1 cup
  • Chopped Parsley2 tablespoon
  • Pinch of freshly ground black pepper1 to taste
  • Dried Oregano1 tablespoon
  • Pinch of turmeric1 to taste
  • Extra Virgin Olive Oil2 tablespoon
  • Sundried Tomatoes4 tablespoon
  • Salt1 coffee spoon
  1. Place the ricotta or tofu in a bowl, mash it with a fork, add the chopped sun-dried tomatoes, olive oil and seasonings.
  2. Mix well, adjust the salt and set aside.
  3. zucchini pasta Cut the end of the zucchini slice lengthwise.
  4. On a board, open a slice, place the stuffing on the end and roll it up.
  5. Serve with sauce.
