- In a bowl, gently mix the eggs, the previously boiled and sliced potatoes, the Parmesan, the fried bacon cut into small pieces, the chopped parsley and finally season with salt and pepper.
- Grease a low, non-adherent skillet, add the ingredients to the mixture over very low heat.
- Wait for the bottom to cook. When it is firm and coming off the bottom of the pan, with the help of a smooth lid, turn the frittata and return to the pan with the wet side down. Repeat the operation until the environment is perfumed and golden.
- If some of the mixture drips, it doesn't mean an error or a problem.
- This frittata goes well with salads and sandwiches.
