  • Melted butter1/2 cup

  • Finely grated coconut or coconut flour100 g
  • Crushed cashews or sherm150 g
  • Oat bran50 g
  • Vanilla essence1 tablespoon
  • Xylitol or sweetener of your choice30 g
  • Salt1/2 teaspoon
  • Baking soda1/2 teaspoon
  • 70% cocoa chocolate100 g
  1. Preparation mode: Beat the liquid ingredients in the mixer until very smooth, then add the dry ingredients and beat for a few minutes. Then with your hands knead until you get a very consistent dough. Put it in a bag or film paper and take it to the fridge for 30 minutes or freezer (just don't let it freeze, but it's important the dough is cold to model). In a glass refractory, grease with butter and shape your cookies as you wish (I used a mold cap, but you can make it by hand). Leave the oven preheated to 180° and bake for 15 minutes. Melt the chocolate in the microwave every 30 seconds so it doesn't burn and after melted pass the cookies as you wish.
