- Diced chicken breast300 g
- White rice1 cup
- Diced sweet potato200 g
- Coconut milk200 ml
- Broccoli200 g
- Sweet grape tomato150 g
- Watercress100 g
- grated carrot60 g
- Chopped chayote200 g
- White Beans200 g
- Lemon1 unit(s)
- Olive oil to taste
- Salt, pepper, paprika, saffron and green smell to taste
- I seasoned the chicken cubes with salt, pepper, paprika and lemon. In a frying pan, I browned the chicken in olive oil, added the sweet potato cubes, water until covered, covered and cooked for 20 minutes, let the broth dry and added the coconut milk and tomatoes, finished with green smell.
- I cooked the white beans under pressure for 8 minutes with just water, salt and saffron, I sautéed garlic and onion in olive oil and added the chopped chayote and a little water, cooked for 10 minutes, added the cooked beans, watercress leaves, kingdom and left it in the fire until the broth was refined.
- For the rice, I sautéed minced garlic, added the rice, carrots and broccoli, seasoned with salt and pepper, added water and cooked for 15 minutes.
- I served it with a fresh watercress, tomatoes and linseed salad, seasoned with olive oil, salt and lemon.
