  • Olive to taste
  • Onion1 unit(s)
  • Oregano to taste
  • Freshly ground black pepper to taste
  • Salt to taste
  • Olive oil6 tablespoon
  • Vinegar1 tablespoon
  1. Chop the eggplant and peppers lengthwise
  2. Chop onion and olive
  3. In a glass refractory, place all the ingredients and mix well.
  4. Put it in the oven on high. After 10 minutes in the oven I took it out and mixed it more.
  5. After another 10 minutes, turn off the oven and leave it there. When the oven cools, remove, mix more and refrigerate.
  6. Add your accompaniments (I ate with boiled egg and lettuce) and that's it! 😁
