  • Lizard meat2 kg
  • Olive oil1 tablespoon
  • Crushed garlic2 tablespoon
  • Cumin1 tablespoon
  • Salt to taste
  • medium chopped onion2 unit(s)
  • Chopped chives50 g
  • Chopped coriander40 g
  • Onion powder (optional)1 tablespoon
  • Water (as needed)600 kg
  • Beans500 g
  • Bay leaf (to taste)5 unit(s)
  1. Treat the menu and remove as much fat as possible;
  2. Put the oil in the pan and add the meat in medium pieces, cumin, garlic and salt;
  3. Mix everything and sauté;
  4. Add 1 onion, half the cilantro, half the chives, onion powder and water (until the meat is covered);
  5. Mix everything and put on pressure;
  6. When ready to shred, remove from pan and set aside;
  7. Tip: if your pressure cooker is small like mine, cook the meats and then the beans!
  8. After leaving the beans to soak for at least 6 hours so that the gases are removed and the beans are softened;
  9. In the meat broth, add the rest of the chives, cilantro, onion and water;
  10. Add beans, salt and bay leaf; Put on pressure;
  11. When the beans are ready, add the meat to the beans and let it boil;
  12. If necessary, add a little water and adjust the salt.
