from plain yogurt (we use Natural Lacbacillus)2/3 cup

rice flour1/2 cup

sweet sprinkle1/4 cup
potato starch1 tablespoon
baking powder1 tablespoon
xanthan gum1/2 teaspoon

Tahiti lemons2 unit(s)
Zest of 1 lemon. to taste

Pre heat the oven to 180°C.
Place the sugar in a blender and blend on high speed until smooth.
Add the eggs, oil and yogurt and beat until it becomes a homogeneous mass.
In a bowl, mix all the dry ingredients except the yeast.
Mix the liquid with the dry with a spatula until a homogeneous mass is formed.
Add the yeast and mix.
Grease a round shape with a hole, put the dough and bake for 25-30 min (time varies from oven to oven so keep an eye on it and do the toothpick test to see if it's done).
📍 Coverage: Mix the cream with the lemon juice, sugar and let it rest in the fridge covered with plastic wrap for at least 30min.
Remove the cake from the oven, wait a few minutes to unmold, put the frosting and finish with the lemon zest.
