  • oat flakes1 cup
  • oat flour1 cup
  • sweet sprinkle (cassava starch/gum)1 cup
  • demerara sugar (or brown sugar / honey or cane molasses)3 tablespoon
  • dry yeast1 tablespoon
  • xanthan gum (optional, use to make it fluffier)1/4 teaspoon
  • warm water260 ml
  • egg1 unit(s)
  • salt1 to taste
  1. 🍞OPTIONAL INGREDIENTS: Mix of grains and nuts (pumpkin, sesame, sunflower, linseed, chestnut, almonds, walnuts etc)
  2. 🍞 PREPARATION METHOD In a bowl add all the dry ingredients (except the salt).
  3. Make a dimple in the center of the dry ingredients and add the wet ingredients along with the salt, add water little by little and mix well, until all the ingredients are united.
  4. After mixing well, add the optional extra ingredients.
  5. Pour the dough into a loaf pan measuring 25.5 X 6 cm high.
  6. Let the dough rise in a warm place, it can be in the preheated oven turned off, for approximately 40 minutes.
  7. Bake in a heated oven at 180º C for approximately 30 – 35 minutes, Wait to cool on a wire rack or plate, and only then cut the bread.
