  • Can of condensed milk (lady)1 unit(s)
  • Butter1 tablespoon
  • Egg Yolks2 unit(s)
  • Ground walnuts150 g
  • Chocolate 70%200 g
  • Brazil Nut to taste
  • Powdered milk to sprinkle on top of the cameos to taste
  1. In a pan add condensed milk, butter and sifted egg yolks
  2. Stir until you disgrace from the bottom of the pan.
  3. Put the ground walnuts and mix well, turn off the heat.
  4. Wait for it to cool completely and with your hands shape it into a cameo shape.
  5. Melt the chocolate in the microwave every 30 seconds
  6. Melt the chocolate until it reaches a temperature of 45 degrees
  7. With a spatula stir the chocolate until it melts completely.
  8. The chocolate must reach a temperature of 31 degrees
  9. Now that you've tempered the chocolate, you can dip your cameos in that chocolate until everything is covered on both sides
  10. Line a baking sheet with cling film and place the cameos on top.
  11. Decorate with chopped chestnuts and use a pastry bag to make chocolate designs on top of the chestnuts.
  12. Put it in the fridge for about 15 minutes
  13. unmold carefully
  14. Sprinkle powdered milk on top or place your cameos in decorative wrappers
  15. Tip: if you don't have a thermometer put a small amount of melted chocolate on your wrist and when you feel like a cold spoon it means you've tempered the chocolate
  16. This tempered chocolate starts to dry in about 3 to 5 minutes so don't take too long to dip your cameos in the chocolate 😉
  17. If you don't have the patience to temper the chocolate, you can use chocolate fondant or just melt it in the microwave and dip the cameos directly into the chocolate.
