  • Canned coconut milk400 ml
  • plant milk600 ml
  • Corn starch4 tablespoon
  • Refined sugar115 g
  • Vanilla essence1 tablespoon
  • Raspberry paste50 g
  • Chopped Strawberries40 g
  • Whole Raspberries40 g
  • Blackberry40 g
  1. In a pan, place the coconut milk and vanilla and bring to the fire until it boils.
  2. Meanwhile, in a bowl, mix the starch with the chosen plant milk and sugar. Add this mixture to the pan and stir until it thickens.
  3. Transfer the mixture to a container that can be refrigerated, with the frosting in contact with the cream to create a film. Let cool for at least 4 hours.
  4. Remove the mixture from the fridge, add the raspberry paste and place in your ice cream maker for approximately 15 minutes.
  5. Take it out of the ice cream maker, add the fruits, mix well and enjoy! For a firmer texture, store longer in the freezer.
  6. Tip! Take the ice cream out of the freezer 10 minutes before eating for a creamier texture ;)
