  • Amaretto4 tablespoon
  • Icing sugar150 g
  • Grated semisweet chocolate50 g
  • Mascarpone500 g
  • Fresh cream200 ml
  • Strong espresso400 ml
  • Champagne cracker350 g
  • Cocoa powder to finish0 to taste
  1. Make a strong espresso, add the amaretto and set aside.
  2. Beat the yolks in the mixer for two minutes and add the sugar - and beat until you get a whitish mixture.
  3. Add the mascarpone cheese and beat until smooth. Reserve
  4. Whip the fresh cream to the point of firm chantilly.
  5. Mix the whipped cream with the mascarpone cream using a spatula in a very delicate way.
  6. Start assembling the dessert on a platter by dipping the biscuits in coffee and layering the biscuits, cream and grated chocolate until you finish with cream.
  7. Sprinkle with cocoa and refrigerate for at least 2 hours before serving.
