  • Sugar1 cup
  • Water1 cup
  • Granulated Tapioca1 cup
  • Coconut milk200 ml
  • Condensed milk1 can(s)
  • Egg4 unit(s)
  1. In a pan, bring the sugar to the boil and cook until caramelized.
  2. Add 1/2 cup of water and turn off the heat.
  3. Pour this syrup into a shape with a hole in the middle and set aside.
  4. In a bowl, mix the granulated tapioca with coconut milk and let it hydrate for 20 to 30 minutes, set aside.
  5. Beat the milk with the condensed milk and the eggs in the blender.
  6. Open the lid of the blender and add the hydrated tapioca
  7. Whisk quickly, just to mix
  8. Pour this mixture into the reserved form with the syrup.
  9. Cover the mold with aluminum foil and bake in a bain-marie (180°C) for about 60 minutes.
  10. Unmold and store in the fridge
  11. And that's it, just serve
