  • Milk500 ml
  • Coconut milk250 ml
  • Salt5 g
  • Eggs3 unit(s)
  • Condensed milk250 ml
  • Shredded coconut50 g
  • Demerara sugar (syrup) to taste
  1. Boil 125 ml of coconut milk and 300 ml of milk. Add the salt. After boiling, turn off the heat, add the tapioca, beating with a whisk. Set aside for 30 min
  2. In another bowl, beat the eggs well with the condensed milk. Add the coconut. Add the rest of the coconut milk and whole milk. Mix.
  3. When the tapioca is hydrated, add it to the mixture in the bowl.
  4. Grease a small mold with a hole using caramelized sugar syrup (just sugar and water on the heat until caramelized).
  5. Bake at 180 C for about 2 hours.
