  • Water3 tablespoon
  • Corn Syrup3/4 cup
  • Sugar3/8 cup
  • Sugar1/2 tablespoon
  • Vanilla Extract1 teaspoon
  • Egg white2 unit(s)
  • Cream of Tartar1/4 teaspoon
  • Salt1/4 teaspoon
  1. Beat the egg whites, adding the salt and cream of tartar, until creamy and frothy, about 2 minutes. Still beating, add the 1/2 tablespoon of sugar and continue beating until the egg whites have very soft peaks, about 2 minutes.
  2. In a small saucepan, add the water, corn syrup and 3/8 cup sugar and bring to a boil.
  3. On slow speed, slowly add the hot syrup to the snow whites. Change the speed to high and beat until thick, fluffy and just hot, about 7 minutes. Change the speed to low and add the vanilla (measurement is 1 1/2 tsp), beating until fully incorporated.
  4. Store in an airtight container in the refrigerator.
